After a long vacation, yesterday I have reached Detroit, US. Had a wonderful time with my family. Today’s special is simple & easy rice dish. Jeera rice is a simple preparation of rice that has been flavored with jeera or cumin seeds. This versatile rice dish can be accompanied well with spicy dal or vegetable or non-veg masala or curries .
Using shah-jeera in this recipe adds a great flavor and aroma to the rice. Coriander seeds gives taste and wonderful aroma to this dish.
Ingredients
Basmathi rice – 1 1/2 cup
Unsalted butter / ghee – 2 tbsp
Jeera / cumin – 1 tsp
Shah-jeera – 1 tsp
Coriander seeds – 1 tsp crushed
Cinnamon – 1 stick
Green cardamom – 2 nos. crushed
Black cardamom – 1 no. cushed
Cloves – 4 nos.
Cashew nuts – 6- 8 whole
Raisins / dried grapes – 1 tbsp
Method:
Soak the basmathi rice for 30 minutes.
Keep the pan on low flame, add butter, roast the cashew nuts & raisins, reserve some of it for garnish.
Same pan add the whole garam masalas, crushed coriander seeds, jeera, shah-jeera & saute it for a minute.
Add the basmathi rice & fry it for 2 minutes on low flame (helps to avoid mushy rice).
Add 3 cups of water, salt to the basmathi rice, cover it with tight lid, cook it for 10 minutes on high flame.
Once the water get boiling, sim the rice for another 10 – 15 minutes or until it done.
Separate each grain of rice lightly with a fork.
Garnish with cilantro, reserved cashew nuts & rasinis.
Serve it hot & enjoy !!
