This recipe is the spice powder / gun powder for vathal kuzhambu. Vathal Kuzhambu is an authentic dish in south Indian cuisine. It taste like tangy & mild sweet stew. Vathal kuzhambu made with sun dried vegetables (vathal) cooked in tamarind sauce & spice powder. This spice powder can also be substitute to prepare sambar. I used rice in this spice mix, this helps to thickening the sauce & cut down the hot if excess.
Ingredients:
Thoor dal – 1 tbsp
Coriander seeds – 1/2 tbsp
Whole dry red chilies – 7 -10 nos. (as per spice)
Black pepper – 1 tsp
Fenugreek – 1 tsp
Urad dal – 2 tsp
Rice – 1 tsp
Jaggery / sugar – 1 tsp
Method:
Keep the pan on medium flame, first dry roast the red chilies & remove it.
Now start to temper all other ingredients given above adding one by one (don’t burn).
Remove the mixture from flame, make it cool, add jaggery & grind it into powder using spice / coffee grinder.
