Happy Independence Day to all Indians (August 15). Today’s recipe is one of the healthiest snacks / breakfast in South India.This rice cake also famous in Asia (Korea). I made this delicious rice cake recipe in tricolor for tomorrow’s special. Jai Hind !!!
Ingredients:
Rice flour – 180 ml (divided into ¼ cup for each color)
Sugar – 3 tbsp (as per taste)
Food colors – Orange (Red 1 drop + yellow 2 drops), Green
Cardamom powder – 1 tsp
Salt – as required
Coconut flakes (dried) – ½ tbsp
Water – as required
Garnish:
Raisins / dry grapes
Cashew nuts
Sesame seeds (roasted)
Method:
Preparing steamer & rice flour;
- First, sieve the rice flour for 2- 3 times without any lumps.
- Add water in the bottom of a steamer, and place the wet cotton cloth over the rack.
- Place the mini spring pan ring in the center of the rack.
Green layer;
- Place a bowl, add ¼ cup flour, 1 tbsp sugar, a pinch salt, cardamom powder, mix it well & keep aside.
- Now mix the green food color in 1 tbsp of water,.
- Add the green color water to the rice mixture & mix it all up. Press without any wet lumps by rubbing the mixture gently between the arms.
- Put the mixture into the center of the spring pan.
- Flatter out the mixture using any cardboard, evenly.
White layer;
- Place a bowl, add ¼ cup flour, 1 tbsp sugar, a pinch salt, cardamom powder, mix it well & keep aside.
- Soak the dry coconut flakes in hot water, drain it, add to the rice mixture & mix it.
- Add the plain water to the rice mixture & mix it all up.
- Press without any wet lumps by rubbing the mixture gently between the arms.
- Put the mixture over the green color.
- Flatter out the mixture using any cardboard or spatula, evenly.
Orange Layer;
- Place a bowl, add ¼ cup flour, 1 tbsp sugar, a pinch salt, cardamom powder, mix it well & keep aside.
- For orange color, add the ratio of red & yellow color (1: 2 drops) in 1 tbsp of water.
- Add the orange color water to the rice mixture & mix it all up.
- Press without any wet lumps by rubbing the mixture gently between the arms.
- Put the mixture into the center, over the white layer.
- Flatter out the mixture using any cardboard, evenly.
Steaming;
- Steam the cake for 20 – 25 minutes on high flame.
- Finally, put it on simmer for 5 more minutes.
- Insert toothpick by dipping in water, if it comes out clean then it is done.
- Remove & garnish with nuts & raisins.
- Serve hot & enjoy it with any fruits.
Hints:
Instead of dry coconut flakes, also can use fresh grated coconut, this really gives a great flavor & taste to the dish.
To check the consistency of the rice flour mixture, it should able to hold it together with your palm.
