Ingredients:
Brinjal – 3
Onion – 1 (chopped finely)
Tomato – 1 (chopped finely)
Red chili powder – 1tsp
Coriander powder – 1 ½ tsp
Tamarind – 1 small lime size
Salt to taste
Tempering:
Oil – 3 tsp
Garlic – 3 (chopped)
Ginger – 1 inch size (chopped)
mustard seeds – ½ tsp
Pepper corns – ½ tsp
Cumin / jeera – 1 tsp
Method:

First soak the tamarind in water and keep it aside.

Keep a pan on low heat, add oil to it and splutter the mustard seeds.

After that, add all the other ingredients like pepper corns, cumin, garlic and ginger and saute it until raw flavour goes away from the ginger & garlic.

Now add the chopped onions and cook it until tender & caramelize.

After that add the finely chopped tomatoes, salt (helps tomato cook fast) and saute until it woes its moisture & looks like mushy.

Now add sliced brinjal, turmeric powder, red chili powder and saute it for 2 more minutes.

Add salt, tamarind juice and generous amount of water, cook until the brinjal gets tender & soft in texture.

Garnish with cilantro and mint leaves.

Serve hot and enjoy it with chicken / lamb / vegetable biriyani!!!!!!!!!
