Ingredients:
Wheat flour / Atta – 1 cup
All purpose flour / Maida – 1 cup
Oil / Butter – 1tsp
Salt to required
Method:

Mix the wheat flour, maida, salt and oil/ butter in the bowl.

Now add generous amount of water to the mix and knead it into the soft dough.

Cover the dough with wet dam cloth keep it for 30 minutes in resting.

After resting it, knead the dough for 2 minutes and divide it into large size balls.

Now roll the dough into round shape, grease with oil over the dough and dust it with flour.

Fold the dough into pleats as shown in the picture above.

Then, Stretch the pleated dough little bit longer and make into swiss roll shape.

Follow the same procedure for the remaining dough and rest it for 5 more minutes.

Now roll the dough in to like parathas.

Heat the skillet to medium, cook the parathas on both the sides. After cooked fold the lachha paratha to get layer.

Serve hot and enjoy it.

Lachha parathas , goes well with both veg and non-veg curries / kurmas .

Resting the dough, helps gluten formation and active the enzymes that transfers into sugar (which enhance its taste).
